    Peru produces almost exclusively Arabica coffee, of which more than 70% is of the Típica variety, followed by Caturra (20%) and others (10%). The average density of plants on the farms is 2,000 coffee plants per hectare, although depending on the cultivation regions this figure can vary notably. It is not unusual for coffee growers to have up to five different varieties mixed within their plots, almost all of which are always cultivated under shade (90%).

    14.- Types of chocolate in Peru

    In Peru, the great diversity of climates differentiates Peruvian cocoa from others. Because it grows in such incredibly biodiverse areas of the Amazon basin and the foothills of the Andes.

    Criollo Cocoa

    The most abundant variety in Peru, with a high fat content and a finer quality of flavor and aroma. Criollo usually has notes of caramel, nuts, vanilla and tobacco.

    Trinitario Cocoa (Trinitaria)

    This variety is a cross between criollo and forastero.  They have a very variable flavor and a strong cocoa flavor with less bitterness, unlike the forastero variety described below.

    Amazon Foreign Cocoa (Forastero)

    The foreign Amazon, also known as forastero, is the most common cocoa worldwide and accounts for about 80% of the world’s chocolate production.
